Krystal’s Caprese Salad
This is a homemade original. This year we planted our first garden. We got off to a rocky start but now we everything is producing! Conclusion, we have a TON of tomatoes. I decided to I wanted sun dried tomatoes but since we have a squirrel in our backyard that loves to eat our spoils, sun drying tomatoes on the deck was a feat I was not willing to take on. So, I roasted some tomatoes in the oven for about 10 hours and then decided I wanted to make a Caprese salad. Well, my version of a Caprese salad. Do not knock it until you try it. Promise.
* Sun-dried tomatoes
* Mozzarella or you your favority Mozzarella type cheese
* Fresh Basil
* 1/2 Lemon
* Salt and Pepper to taste
* Bacon grease (you know it!) – just enough to say you did. One to two tablespoons depending on how big you make your salad.
If you do not have time, you can use fresh tomatoes but I love the sun-dried tomato taste. Click here for the sun-dried tomato recipe. Chop your sun-dried tomatoes. I quartered mine but you can make yours as large or as small as you like and add them to your bowl of choice. Next, coarsely chop your basil and add to the bowl of tomatoes. Take your lemon and squeeze the juice into the mixture. Chop up your mozzarella and add. Drizzle in your bacon grease, add salt and pepper to your liking and it is ready!
