Fried Chicken Tenders
Being gluten free, I really really miss fried chicken tenders. I think I final perfected my recipe enough to share.
- 3 parts all purpose Bob’s Red Mill gluten free flour.
- 1 part yam or cassava flour
- 4 tbsp salt
- 4 tbsp freshly cracked black pepper
- 3 tbsp tumeric
- 3 tbsp cumin
- 3 tbsp paprika
- 1 tbsp cayenne pepper
Milk Egg wash:
- 1/2 to 1 cup milk
- 2 tbsp of Mayonnaise
- 1 egg
You can either use 2lbs of boneless skinless chicken breasts and chop into tenders or buy chicken tenders. I buy the Nature’s Place boneless skinless chicken tenders. I use canola oil in my cast iron skillet for frying but use your preferred method of frying.
I cover the chicken in the Milk Egg wash, then cover in the flour mixture and fry in the oil until done. This is not the most healthy gluten free dish but it is so delicious and it is as close as I have ever come to the glutenous fried chicken I loved as a child.
I think the mayonnaise in the wash really helps the flour blend to stick to the chicken and helps give it is extra crunch that it is difficult to achieve when using gluten free flour. Enjoy!
