Chicken Salad Sammich on the fly
Being a gluten intolerant mom to a toddler, I cannot just pick up food from some drive thru on hectic days. Plus, today is grocery day so the frig is a little bare. I had some left over chicken so I threw it in the food processor with some Hellmans mayo, a little olive oil, salt pepper, dill and a splash of paprika. Sometimes I add cayenne and/or spicy mustard but I was hungry and in a rush today. The amount of chicken you have will depend on how much mayo and olive oil you use.
3 tbsp cooked chicken (off the bone)
1 1/2 to 2 tbsp of mayo (I use Hellmans)
Splash of olive oil
salt, pepper, dill, and paprika to taste.
2 pieces of Gf bread
Sargento cheddar cheese
I toast my gluten free Rudis or Udis bread in the toaster. Then place the cheese on the toasted bread and throw it in the microwave for about 10 seconds. I only do this when I am in a hurry because I absolutely love melted cheese. I slap on the chicken salad and gobble it up. If I have homemade dill pickles, I will add them. But again, this is a fast lunch for a gf mom on the go.
