Almond Toffee

Since being gluten free, there is very little candy I can eat, that tastes good and is not incredibly expensive. This Christmas, even with a new born and a toddler, I decided I wanted to make some candy! I looked a couple recipes but decided to create my own after a couple failed attempts.
Ingredients:
• 1 cup butter or margarine
• 1 cup granulated sugar
• 1/2 cup warm water
• tsp vanilla
• 1/2 cup chopped almonds
• 1 cup dark chocolate chips
• parchment paper
Combine the butter, sugar, vanilla and water in a small pot over medium to medium-low heat. It is important to have a thermometer to get the temperature of the mixture to 300 degrees Fahrenheit. It could take up to 20 minutes to get to reach the correct temperature. You want to take it slow so that you achieve and nice caramel color. Make sure you have your parchment paper laid out ahead of time because as soon as your mixture 300 degrees, it is going to start to harden. This is when you want to pour it on the parchment paper, Once the caramel mixture is spread out, spread the chocolate chips over the caramel. Use a knife to spread the chips. They will melt as they spread across the caramel. Then, spread the chopped almonds over the chocolate. I let mine sit for a couple hours and then it is ready to serve!
Remember, if you do not succeed the first OR the second time. Try again! I did and it was worth it!
